So glad I took the time to meal prep this week! It's been pretty crazy at work and I've been getting home at 9 every night...if I had to cook rn I'd be like 😡 but I don't so I'm like 😏 This dish is pretty easy, gluten free, low carb and v delicious. Make it! ---> CHICKEN: Take 4-5 boneless skinless chicken breasts, pat dry and lay on a sheet pan lined with tin foil. In a good processor add 1/2 cup toasted almonds, 3 tbsp EVOO, 3-4 garlic cloves, salt and pepper to taste. Blend well into a crumble but not so much you make almond butter. Rub paste over chicken breasts and bake in 425 degree oven for 15-18 minutes. SALAD: In a large salad bowl whisk the juice of one lemon, zest of one lemon, 1 tsp Dijon mustard, 3 tbsp EVOO and a dash of salt and pepper. Add 1 lb sprouts with the leaves trimmed and separated. Incorporate well. Gently fold in avocado slices and top with toasted pepitas. Enjoy! #eatclean #cookingonhudson
Wow it's been almost a month since I last posted. Well this past month has been CRAZY!
After 11 years of living in Texas I decided to move to California.
For the past few years I've been wanting to move out of Texas. Why? Because Texas is so boring 🙊😂 don't get me wrong I love it, but it was time to explore another state.
My options were New York (NYC or Brooklyn) and California (LA or San Diego). New York City is my favorite City of all! But after giving it a second thought I decided to move to a City that will help me grow my business. So Los Angeles it is.
All my providers are located here, so it will make my work a bit easier. Also, we are planing on opening another business and California is just the place to do it.
So, yeah I decided to move to Cali. I'm not going to lie, I was super nervous and sad for leaving h-town, but at the same time excited for the new experiences.
Hope I made the right decision and I chose the right City/State to grow my businesses. If not, I know that Texas will be there for me 🤗. So far, I'm loving it! And if you have been following my insta stories you know that I've been enjoying the outdoors way too much 🤣
